How do I know what RAM is best for my PC?

I will be purchasing RAM for a PC of mine that operates as a gaming server and I don't know what types of RAM I should get. I will most likely be purchasing from http://crucial.com/ . I selected my PC model (Dell OptiPlex 740) and it showed what types of RAM is compatible with my PC; so the question is, what kind is the best? On the website it says...
Memory Type: DDR2 PC2-8500, DDR2 PC2-6400, DDR2 PC2-5300, DDR2 (non-ECC)
Maximum Memory: 8GB
Slots: 4
What does this mean, and which type should I buy? What is the best? Automatically I'd assume PC2-8500, since it has the highest number.
